A bit about Mandi
Mandi is said to originally come from Yemen, but today it’s spread among many regions of India, most popularly in Hyderabad. It’s considered a staple in most of Middle East.
Mandi is usually made of rice, meat and spices.
The choice of meat can be lamb, chicken or even camel, though this is mostly used in the Gulf. The mixture of spices is called Hawaij, which means “mixture” in Arabic. This could be store brought or easily made from scratch at home as well.
Mandi is traditionally cooked in an underground pit called taboon. The meat is boiled and the spice is then used to cook the rice. It is then suspended over the rice in the oven like pit with charcoal and dry wood.
It’s cooked overnight or up to 8 hours to make the meat soft and tender, all the while the rice below it takes in all the flavour from the meat!
