no one can afford them and people who can afford them aren't willing to buy
They are still made - craftsman in Europe usually build stuff like that as master peace. But can be quite pricey.
I know someone that can make one for you, I wouldn't be surprised if it cost 30 to 50 thousand dollars or more.
You figure it would take six months or more to make, so multiply that times the going rate for a master cabinet maker.
Only the very rich could afford it.

This is a marvellous video, along with its companion on the construction. I wish they had videos like this for all mechanical desks.The only thing lacking in the video has to to do with the nature of writing in the past. Using a feather to write meant that you had to use a blotter and small quantities of sand in addition to constantly dipping your feather in the ink pot. This dictated several aspects of inner and external shapes of any desk. Too bad that the video didn't illustrate this.
To think that something like this was made so long ago an with such craftsmanship it’s just a beautiful work of art

The Lock really needs to be hidden, it is just held in place by a spring and doesnt even need to be picked since a thin rod would work on it. The only safe part is the lowest hidden compartement, since it has a real lock, which is unfortunately also visible.

There is a more elaborate table like this on display in the appartments of Napoleon III in the Louvre in Paris. It is equally stunning. I'll see if I can post a picture of it.
