In you example : Their books = leur livres...leur is singular but should it be plural because as the possessive adjective it has to agree with the noun? or is the leur in the capacity of possessive pronoun? (time stamp: 4:02 in the video).

Les leurs- their books. Their is plural, more than one person. Books is also plural, more than one book. So the answer is - les leurs.
