      Haha , me too man , me too. I've cut up probably 5000 fish and cleaned about 50,000 crab. But the way this guy just fillet them fish , I'd give him mine any day. That was really cool to watch , and is literally 10 X faster than any fish I've ever cut up.

    When I was 12 I would sit at the docks and wait for the party boats to come in. 2 dollars a fish. I would bring home 60 to a hundred dollars a day. Not a bad summer job for about 5 years

      @@iride454 Nah that is fairly easy but fillet knifes have to be sharpened fairly often because of the soft metal they are made out of (that and the finer the edge the quicker it fades)

    My dad was a butcher for 18 years, we have done a ton of cow and deer together and I'm always amazed at how quick he works even though he about took one of my fingers once, one night we were doing a deer and he turns and looks at me and says could you imagine what I could do to a person ☠

    The 2nd fish is Blue Fish, bloody and fishy unless you marinated with yellow mustard or vinegar to get rid of fishy taste. Shark smell like ammonia after few day in refrigerator. I used to be the fish butcher by fishing charters during weekend and summer time while high school and get paid $1 each or $5 for 6 all under 16 inched. 50 cents extra each for 17”-24”, $2 for up to 36”. I get paid good $$ on cleaning offshore fish even $30-$50 for a tuna depend on size. I cleaned, portioned,and bagged it. I always bring home free fish for Friday fish dinner they exchanged me. Some time I give the free fish to kid and the father gave me good tips. Did for 2 years and saved all the money for nice brand new pickup truck to go to college and did not have to worry about big monthly notes while at school.

      2nd fish is a Kahawai, fish native to New Zealand and some parts of Australia. Good table fish, good to be smoked and puts up a fight for a fish of it's size.
      Usually drain the fish right after you catch it and the flesh goes much whiter.

    There's a place on Lake Ontario called henchen's marina. They have a couple kids there every summer who can clean a bucket of perch in 5 minutes. The big 20lb lake trout take seconds.

      @@1982MCI I no longer eat out at restaurants. I once saw a man getting acupuncture treatment in the back of a Vietnamese kitchen. In the kitchen. I can’t begin to say how unsanitary that is. To top it off he was bleeding and yes I did report that restaurant. They’re still open til this day.

      Lol, the best part of fish is the head. Skin and red part is edible too. Internal organs is delicacy if it is fresh. This video showcases his skills, but definitely wasteful.

      I use use every part of the fish. The meat is for eating, on salmon I use a spoon to scrape between the bones and I get a burger out of it, I use the bones for fish stock and freeze it for later use, I smoke the cheeks and burry the rest in my garden for compost.

    This guy is pretty good and glad to see he can earn a living at it. Although, I've never understood why folks won't clean their own catch or animal they harvest. Like the puff at 4:21 licking his finger prior to opening the bag, not a book there mate!

      I wouldn’t tip, after I saw him do the first fish, I would take the rest of my fish and run. Sloppy knife skills, scamming half the meat by leaving it on and keeping it, cutting guts, then cross contamination of every fish on wooden board.
