Haha , me too man , me too. I've cut up probably 5000 fish and cleaned about 50,000 crab. But the way this guy just fillet them fish , I'd give him mine any day. That was really cool to watch , and is literally 10 X faster than any fish I've ever cut up.

When I was 12 I would sit at the docks and wait for the party boats to come in. 2 dollars a fish. I would bring home 60 to a hundred dollars a day. Not a bad summer job for about 5 years

My dad was a butcher for 18 years, we have done a ton of cow and deer together and I'm always amazed at how quick he works even though he about took one of my fingers once, one night we were doing a deer and he turns and looks at me and says could you imagine what I could do to a person ☠

I used to be the fish butcher by fishing charters during weekend and summer time while high school and get paid $1 each or $5 for 6 all under 16 inched. 50 cents extra each for 17”-24”, $2 for up to 36”. I get paid good $$ on cleaning offshore fish even $30-$50 for a tuna depend on size. I cleaned, portioned,and bagged it. I always bring home free fish for Friday fish dinner they exchanged me. Some time I give the free fish to kid and the father gave me good tips. Did for 2 years and saved all the money for nice brand new pickup truck to go to college and did not have to worry about big monthly notes while at school.
2nd fish is a Kahawai, fish native to New Zealand and some parts of Australia. Good table fish, good to be smoked and puts up a fight for a fish of it's size. Usually drain the fish right after you catch it and the flesh goes much whiter.

Ive had that same scaler for 20 years, and everyone asks me about it, I use it to hold fillets when skinning. Can't find another anywhere in the U.S. like it.
It’s simple, you give him some of your catch, and he’ll fillet your fish for you. The guy with the shark didn’t want to pay for his labour so he took the good parts of the shark as payment instead. The bin in his right is a waste bin, and the two on his left is what he gets for doing the work.
I had 4 guys who competed in WORLD CHAMPION fileting. THREE SECOND PER SIDE... I swear that these guys where handed a knife before they were born....lol
I wouldn’t tip, after I saw him do the first fish, I would take the rest of my fish and run. Sloppy knife skills, scamming half the meat by leaving it on and keeping it, cutting guts, then cross contamination of every fish on wooden board.

Reminds me of of my childhood, my brothers and I would sit on the dock's and catch perch by the buckets full. We'd bring them up to the old timers at the camp ground they'd filet them and we'd all split it.
