    Great Natasha! I'm from Trini so I agree with you 100% with "no eggs in ice cream!" & using custard powder instead of the eggs.... this looks like a great ice cream recipe! It's really Trini style!!! Thumbs up girl...!!!

    Made your recipe, added one egg yolk which I tempered w the milk base ingredients bc I didnt have any custard powder. Absolutely DELISH 😋😋 Thank you!!

    That looks really good! I have never seen the custard powder so I will have to look for that but I will try this since rum raisin is my favorite ice cream!

    Love this recipe, because Flavourite Ice Cream here in Trinidad seemed to stop there productions, not seeing any at the groceries, dont know why, but will definitely try this!

    When you said all evaporated milk does that mean to exclude the whole milk also? so therefore the ingredients will read 4 cups of evaporated milk? or 3 cups evaporated milk plus 1 cup whole milk? This is for not having the heavy whipping cream. looking forward to your response.

      you are using all the ingredients - 1 cup evaporated milk - you can use the entire tin
      1 cup whole milk
      1 pint of heavy whipping cream
      If you omit the heavy cream use evaporated milk to replace it.

    Hi , so I tried making this recipe but the ice cream never came together. I know alcohol does not freeze. I added a couple cap fulls of rum in the warm liquid mixture at the end (While it was cooling).
    I skipped the cooking off the rum part. I swapped the heavy whipping cream for evaporated milk.
    What do you think may have happened? What should I do differently?
    Also...with the soursop ice cream that was so delicious and creamy, I found it was melting quickly. Any tips on how to prevent That? My mom said it's because it was too sweet or too creamy? What say you?

      You were supposed to cook of the alcohol. The raw alcohol prevents it from freezing. Also for the soursop try not making it as rich. The best milks gives a softer consistency.

      IHaagen Daaz rum and raisin ice cream can never be compared to Trinidad rum and raisin ice cream. It's ridiculously sweet.

    I made it without the machine but realize it is making ice. Can you tell me why or would you know why it is forming ice? Thank you

      The machine creams it. Without it ,it would be icy like a sorbet

    Hi good night. If I use evaporated milk and stay fresh milk alone will the ice cream still have that creamy texture u get from using heavy cream.

    why not just strain off the alcohol? wouldn't heating it remove some of the alcohol absorbed into the raisin?
