That’s to much work… When you can just mix the xanthan gum with the dry sugar mix it together well then add the mixture last to the wet ingredients that are mixing in a blender. Blend well.. Bam you have ice cream mixture ready, Works for me every time. What you are doing is not necessary,time consuming and redundant

I haven't been able to create a recipe that uses pistachios or other nuts in the ice cream base that I would recommend because their addition makes the ice cream dense. The next best option is to infuse the ice cream base, but I haven't experimented enough with it yet. However, your suggestion has encouraged me to try it, especially because there is high demand for it. Thank you! :)
@@theicecreamqueen He uses "Salep" instead of xanthan gum. (Salep is a flour made from the tubers of the orchid genus Orchis (including species Orchis mascula and Orchis militaris). These tubers contain a nutritious, starchy polysaccharide called glucomannan. It's very expensive. xanthan gum probably will work too. (7gr salep for 1lt milk. 1.5gr xantan gum is almost will be same I guess )
@@cgoktug Yes, xanthan gum does indeed create stretchy ice cream, similar to salep. If you want to replicate dondurma ice cream, you can double the xanthan gum (increase to 1 teaspoon for this recipe).
@@theicecreamqueen I made so many ice cream recipes before with Salep. I am living in Turkey. Here all Ice cream shops uses Salep. We have Famous "Maraş Dondurması - Maraş Ice Cream" in here. Origin is Kahramanmaraş city but you can find everywhere. So hard to find that special milk or Jersey Cow milk and need so much efford. That's why I started use Xanthan Gum and I follow your recepies. I don't need special milk, so easy to do. It has a great consistency and they are all delicious. Today I prepared the vanilla recipe by adding mastic gum. I made half of it with pistachios and ice cream. Note: If it is very difficult to find mastic gum, you can use mastic gum flavored chewing gum. I made the remaining half using black mulberry syrup and strawberries. I also separated some for vanilla and mastic ice cream. One time 3 different taste :)

By the way, I live in Greece, so we have many similarities in culture and food traditions! :) Why does Dondurmas ice cream specifically require Jersey cow milk? I love using salep in ice cream, but it has never occurred to me that I need a certain type of milk.
