Keep doing that and I enjoy your prepping of the food especially as it pertains to your clients. I too have done some interesting private chef work. Cooked a couple years ago for the staff (22) of the Myrtle Beach Safari folks. I even cooked breakfast for a surprise guest a full grown chimpanzee (Vali). They put me up in the VIP mansion. I have cooked there twice for a total of 5 weeks. I got to play with baby tigers and chimps, swam in the backyard river with Bubbles the elephant, good times. You have taught me some good nuggets. We could share stories for sure.

I agree with you and thank goodness my family did not mind when I decided a few years ago to skip the turkey and make a beautiful Standing Prime Rib Roast - now the tradition in our home!!!! I cover the roast with a roasted garlic horseradish crust. Green beans - I make roasted green beans, mushrooms and onion - generously tossed with a great quality tamari sauce before roasting and all done on a sheet pan (Alison Roman recipe). I like stuffing and mashed potatoes, and another tradition is butternut squash soup as our beginner. I also indulge and make homemade parker rolls.

Maybe if it was made from scratch but the one made from canned stuff missed the mark for my family. Szechuan green beans are lovely. I love the way the peppers give that funny feeling. Yes. My parents would cook up a big Thanksgiving meal. But my parents immigrated from China years ago and my mom will make some Chinese side dishes with the traditional Thanksgiving food.
My family tried changing up the Thanksgiving menu with lasagna (we are Italian) and a brother-in-law came for his first holiday with us that year. He was so disappointed that we did not do the traditional Thanksgiving meal and to this day they do not come to Thanksgiving anymore and is still a sore subject 7 years later! Of course we have to poke the bear every once in a while about the menu for Thanksgiving. I’m with you, very tired of turkey!
I'm not into the traditional stuff, I did Chinese for Thanksgiving and will make Mexican for Christmas. That's just how I roll. The vertical thing really didn't work for me but still love the life you fell into and decided to share with us Misfits. ❤
I shook up my Christmas traditional menu over 20 years ago as my kids did not like Turkey - so I created a family friendly menu that suited our hot climate and then rejigged everything again to accommodate a shift worker and we did Christmas Eve as our main meal! I think it's so important to shake things up as otherwise the food just becomes predictable and boring.

I am with you all the way. I could live without ever eating another bite of turkey or pumpkin desert. A good smoked ham with mashed potatoes reminds me of my childhood but it’s not a holiday meal, as good as it is.
I didn't hate the vertical switch but I like the horizontal format better. Don't worry about losing your car. I lost my car once when quickly driving to an interview downtown and I was 24. I was looking for a vacant parking lot, parked, reviewed my job information on the way to the interview. When the interview was over I completely drew a blank. I walked around for 4 hours before finding my vehicle. Pumpkin pie is cool once or twice a year. 😀

I was once standing in front of the DMV kiosk in there when an employee tackled a shoplifter who was trying to run out of the store with two huge boxes of diapers. Dude slid on the floor up to my feet and we just kind of looked at each other for a moment before he got up with one box and ran out of the store. Next time use coconut milk because it greatly enhances curry dishes. And if you can't create your own fresh coconut milk try the powdered ones you have to reconstitute, I don't really like the canned ones, the flavour profile in my opinion isn't as great. I'm from Trinidad, an island in the Caribbean, so dried coconuts are easy for me to access and I usually buy them, break them and cut the hard jelly flesh to blend and create my own coconut milk/cream. The less water you use the creamier the coconut milk. It provides better flavour than cream to curry dishes. Btw, I love the content of your videos and the vertical video was cool for the purpose of focusing on the pot. Great video.
The short form cooking works for me.👍🏻 for people that are non-dairy, a creamier, thicker nondairy milk is unsweetened pure soy milk. I buy Trader Joe’s because it’s organic soybeans and water, nothing else. I happen to be 99% vegan (salmon a couple times a month) but thoroughly enjoy your videos!

Butternut squash pie is the superior pie. Babish has a video from several years ago with from-scratch recipies for thanksgiving dishes...The yams recipe with ricotta and toasted pecans is fabulous. Also random fact no one asked for: Clove oil can be used to put fish to sleep and also euthanize them if they have tumors, etc.

I am 100% anti-turkey. Roast chickens are easier and better IMO, and that still isn't one of the first things I'd want as a celebratory main. And YES! Jazz up sides! One year we had a shaved brussel sprouts salad (shaved brussel sprouts, dried cranberries, roasted/salted/shelled pistachios, shaved parm, and a meyer lemon vinaigrette). It was a great change of pace. Great vid as always!

And YES! Jazz up sides! One year we had a shaved brussel sprouts salad (shaved brussel sprouts, dried cranberries, roasted/salted/shelled pistachios, shaved parm, and a meyer lemon vinaigrette). It was a great change of pace.
