The only problem with the street food vendors is, they collect the cash and serve the food with the same hand. They should designate a separate person to handle cash with token system. As we all know how our currency and coins travels and exchange daily.

The biggest problem, in addition to hygiene, is the reuse of oil. Also packaged oil which is not natural oil ( contains mineral oil also) is used to reduce cost ( even high end restaurants also do the same) by street vendors. Original oil can be used if they use their own oil extracted directly from peanuts

For picture only it looks nice..bangalore and mysore region dosa is added with sugar in the batter..never liked it. Even in sambhar chutney they add sugar.. and sambhar usually won't have whole paruppu but just paruppu podi.. Only tamil and Andhra vegetarian style hotel dosa only my favorite..

May be you have not tasted dosa in proper hotel in karnataka. They add jaggery in sambar but not in coconut chutney. The chutney tastes really good
