- Discover the art of Rose apple (Chambakka) wine making, blending rose apples, sugar, wheat, spices and fermentation techniques to create a delightful homemade wine
Rose apple (Chambakka) wine recipe
Ingredients:
Rose apple (Chambakka) - 1 kg
Sugar - 1kg
Cinnamon sticks (¾- 1 inch) - 2-3 pieces
Cloves - 10 - 12 nos
Broken wheat (optional) - 2½ TBSPs
Active dry yeast - 1 tsp (May be proofed by adding to the yeast 1 tsp sugar, 2 TBSPs lukewarm water, stirred well & kept aside for about 25 mins for activating-will become foamy)
Potable water (boiled & cooled/filtered water) - as needed to just submerge the mixture
Preparation:
1. Gather fresh rose apples, discard damaged fruits/parts and wash thoroughly (2-3 times)
2. Drain and dry them (with clean dry cloth) and deseed them
3. All items used in further steps have to be clean and absolutely dry
4. In a clean ceramic/glass jar, alternately layer the rose apple with sugar
5. Before the last few layers add cinnamon, cloves, broken wheat and the foamy yeast
6. Add the remaining final layer/s
7. Pour water (potable) to submerge the mixture, leaving some space at the top of the jar
8. Seal the jar loosely and tie with a cloth to keep off insects in a cool, dark place
9. Open the jar each day for the next 21 days and stir (50-55 times) the contents with dry, clean wooden ladle (preferably) & seal the jar as before
10. Fermentation (frothiness)can be noted while stirring
11. After 21 days, strain the liquid through a sieve or clean cloth to remove solids, then transfer to glass jars for settling
12. Drain the clear fluid to another bottle (or old wine bottles)
13. Age the wine for few more weeks to enhance its flavor
14. Savour your homemade wine & enjoy pure joy in every sip !
Note: People with liver issues or diabetes or other underlying conditions may avoid using it
