Great video. Exactly the kind of video i was looking for because I got it as xmas present and i am living in a building, and even have smaller balcony, but luckiy have dinner table next to the balcony, so i can prepare the pizza there and cook it in the balcony. However, my worry is how much the pellets create smoke. I don't want neighbors to complain, as I might not have enough dough ready to bribe them everytime i cook pizza. Did you get any problem with the neighbors about smoke, or smell? is it sustainable product for apartment balconies?
hi :) great gift to receive for Christmas. i didnt have any complaints from the neighbors so far. i recommend putting a small fan about 20 cm behind the oven to accelerate the fire. this helps keeping the inside of the oven clean from soot as it burns off so you dont have to manually clean it by hand. the fan also helps the pellets burn cleaner with less smoke. you should also have a metal stick of sorts to enter from the back to the grill to move the pellets inside so it receives more oxygen. after about 30 mins the ashes partially block the air intake resulting in a lower fire, less temperature and more smoke. i totally recommend a biscotto stone but optionally you can measure the temperature on the stone to be under 420 degrees in the back third of the stone. turn the fan on and off to maintain temparature. start with smaller pizzas so it is easier to turn inside the oven and avoid burning. weight for 12 inch pizza is 250 grams so start with 210 grams or so and make 10 inch pizzas in the beginning
Awesome job man. It just goes to show you can make pizza just about anywhere with an Ooni oven. I look forward to seeing more of your videos.

Appreciate all the details. Very nice of you!
Some good tips for getting the fire going, especially the fan and taking the cover off. Solid video!
What kind of flour are you using?
