Not a chef here and the Compote came out quite well for my French toast. Didn't have Granny Smith, substituted with a table spoon of lemon juice. Rather than serving them in chunks, I semi pureed them. Used my own judgement on the quantities :)
Made this yesterday. Not gonna make it again. I have 5 cups of this in the fridge and no one wants to eat it. Below average dessert. Ginger flavour is too strong. Bits of apples in my mouth not good. Waste of ingredients. And to think I could've used those apples in my carrot juice 😣. Definitely not worth the effort.

id say 3/4 to 1 cup of sugar per apple..
thats waaaaaaaaaay too much sugar. All that does is wreck the other flavours, and your digestion too.
