I guess it's because this was their last season that didn't do much with her powers, but there was some awesome stuff they could've done with Gothel. I mean, she has these powers to morph into other people and she also briefly hypnotized Margot at one point. They could've made a good use of this in the show.
Tbh Gothel's an underrated villain. Unlike other villains, Gothel's goal is to wipe out whole humanity and that could even go far to the magical realms and that's catastrophic compared to any dark curse.
