Yes you can use as many guacd servers as you want. First you will have a default guacd defined in the guacamole.properties and then others can be put in the connection parameters where you have guacamole proxy options for different types of connections.

Great video but audio is not good, i think your mic is too close to your mouth, or volume too high... ;)
