2:10 notice you do this numerous times, turning the wheel the opposite way to the turn for a split second. Why is it the kart performs better this way?

Because karts are so light you can 'unbalance' them when approaching a turn to get a little bit of oversteer. This helps turn the rear axle into the corner so you're effectively 'steering' with all 4 wheels.
