The word "Chinese Thai" is quite ambiguous and needs citations. While the Chinese in other non-Chinese countries are like a minority group of people, in Thailand there's virtually not so discrimination. Thai people are the people of assimilation from many ethnics where Chinese is one of the majorities.
Yaowaraj is a place that has been serving for over 2 centuries as a convenience for China imported retail goods trading. As one of the so-called "Chinese Thai" whose first ancestor from China came to this country ~150 years ago and served as a vassal under King Rama IV myself, I grew up in my well-known family never live a damn thing Chinese culture nor speaking reading, writing a Chinese word.
Most of us "Chinese Thai" are more or less mixed ethnic and those Chinese things only serve us as relics and tribute to our Chinese lineage among the others. Only our elder members of family who just came directly from China later times are of pure Chinese blood. I can tell that you can expect a great proportion of Thai people who don't look Chinese at all could also have few Chinese ancestors here and there along their family line.

Thai/Chinese noodle in Thailand, you can input sugar, fish sauce, Chili and Vinegar. It's different with Japanese style? Japanese interesting and respect the restaurant by keep original taste of cooking but in Thailand will up to your taste, you can eat with your taste. It's just my opinion about Japanese style, I may misunderstand. But in Thailand we can input the sugar, Chili, fish sauce,... as you want.
