Second, the jam itself is likely the source of most of the problem, since it seems like you either have a kind which is so viscous that it is basically solid, and thus a better projectile, but won't really spread itself on the bread on impact, or a kind which is better at spreading but has far less than ideal ballistic properties. If you did further testing to engineer the perfect jam consistency for a balance of both, that would go a long way.
