- In every Durian season when we get Durian, I ended up eating them. Since it has a strong heat to the body, even grandmother doesn’t like to eat it much. Brother had never eaten Durian in his life at all. But this time I got this naughty idea of making him eat it somehow! Durian is a strange fruit , known as the king of all fruits among all the other fruits in the fruit world! There are so many people who are in love with this very nutritious fruit but saying that, there are people who hate it and even don’t come closer to the Durians because of it’s pungent fragrant! I compared Durian to a king who has his loyal subjects as well his foes in a kingdom. I couldn’t help giggling for my funny imaginations though!
I am sure you must have heard Payasam which is famous among the Hindu community as it’s a dessert which got added to our traditional desserts from the Indian immigrants! Brother is very greedy for payasam and he really enjoyed the Durian payasam and the Durian stuffed date sticks which I made. I realized that he noticed a difference in the taste! But since he has never tasted Durian in his life, brother never even imagined that this was Durian. I made a that fruit kebab with dates and green grapes, mainly because I wanted my brother to have Durian without suspecting the Durian pungent taste. It really worked as the taste of the Durian filling which I made to fill the dates was somewhat subtle because of the added cinnamon powder, the bees honey and the vanilla. Maybe because of these added flavours and fragrances, brother didn’t notice the actual flavour of Durian at all though he commented about the unusual taste!
That evening I washed the Durian seeds, sliced them and then soaked them in bowl of pure drinking water. What happens is by next day morning the water turns in to a thick jelly due to the reaction of the Durian seeds. It is very well known that if you drink this pure jelly early in the morning that it helps to cool down your entire system. Our forefathers used to take this jelly because of its healing and soothing properties for gastritis. What A wonder miracle of the nature! Don’t you think guys? Even though this wonder Durian is known to be very strong pungent and heating factor, but it’s seeds has all the healing goodness of calming down your body! I always think of not only the nutritional value of my food but also the colours as well. You can see what I did with the Durian seeds jelly as I added grated green cucumber and fresh carrot juice and made a drink that will fit to any king or a queen! Of course as you guessed grandmother liked the juice more than both of us!
Why waste the rest of the Durian fruits! Since I love cooking nutritious and yum food, I decided to make a dish out of the rest of the Durians! Since long time I had this craving to make something yummy by using whipping cream. This pancake layered cake has been sandwiched with whipping cream and creamy Durian mousse which Ive creamed in a separate bowl. I made the pancake batter with strawberry purée! This cake is a very flavoursome cake as I added sliced strawberries and black grapes in between every layer. Guys do you know that somehow I accomplished my task of making our little brother a Durian fan. Poor fellow nicely enjoyed the cake saying the taste is so similar to what he ate yesterday! Finally I revealed the secret of the Durian to my innocent brother as I felt very sorry for deceiving him further! After he became a fan of Durian, to my pleasant surprise he had whacked one whole Durian fruit out of the two that was left in the kitchen! This is how I made my little brother to fall in love with this wonder fruit, Durian!

අසල් වැසි ඉන්දියාවෙයන් සංක්‍රමණය වෙලා ශ්‍රී ලංකාවෙ ජීවත් වෙන අය නිසා පායාසම් අපේ රටේ තරමක් ජනප්‍රිය ආහාරයක්. අපේ මල්ලිත් පායාසම් වලට හරිම කෑදරයි. මම මේ හදපු දූරියන් පායාසම් එක එයා බොහොම කැමැත්තෙන් රසවින්දා. හැබැයි එයාට වෙනදට වඩා වෙනසක් නම් තේරුනා . හැබැයි කවමදාවත් දූරියන් රහ බලල නැති නිසා ඒ රස ආවෙ දූරියන් නිසා බව මල්ලිට තේරුම් ගියේ නෑ. ඒ වගේම රට ඉඳයි, කොළ මිදියි එක්ක හදාගත්ත පළතුරු බාබක්‍යූ එක හැදුවෙක් මල්ලිට හොරා එයාටම දූරියන් කවන්න ඒන නිසයි. රට ඉඳි ඇතුළට පුරවපු දූරියන් මිශ්‍රනේට කුරුඳු කුඩුයි මී පැනියි වැනිලයි එකතු කරපු නිසා දූරියන් සුවඳ ටිකක් යටපත් වෙනවා. ඒ නිසාද කොහෙද රස අමුතුයි කියල හිතුනත් මල්ලිට ඒවා දූරියන් කියල නම් අඳුනගන්න බැරි වුනා.
එදා හැන්දෑවෙ දූරියන් ඇට ටික හොඳට හෝදලා පෙති කපලා පිරිසිදු වතුර එකක පෙගෙන්න තියබ්බා. පහු වෙනිදා වෙද්දි ඒ ඇට නිසා අර වතුර ටික ජෙලි එකක් බවට පත් වෙනවා. ඒක උදේම බිව්වාම ඇඟ නිවෙනවා. ගැස්ට්‍රයිටීස් වලටත් ඉතාම සුවදායක පානයක්. හරිම පුදුමයි නේද. දූරියන් කොපමන උෂ්නාදිකයි කිව්වත් එ්කෙ ඇටවල තිබෙන්නෙ ශීතාධික ගුණයක්. ඉතින් මම දූරියන් ඇට පෙරාගත්ත ජෙලි එකට ග්‍රීන් ක්‍යුකම්බර් ග්‍රේට් කරල දාල, පෙනුමයි පෝෂණයයි තව වැඩි වෙන්න කැරට් යුෂත් එකතු කරගෙන බීමක් හැදුවා. අත්තම්ම තමයි ඒකට වැඩියෙන්ම කැමතිවුනේ.
ඉතිරි දූරියන් ගෙඩි දෙක තුනත් නිකම්ම කාල දානවට වඩා මොනව හරි කෑමක් හදන්න එකතුකර ගන්නව කියල හිතුනා. ඉතින් මම කාලයක් ආසාවෙන් හිටියෙ විපින් ක්‍රීම් පාවිච්චි කරල මොනව හරි කෑමක් හදන්න. පෑන් කෙක් තට්ටු අතරට විපින් ක්‍රීම් දාල හදාගත්ත මේ කේක් එකේ විප් කරගත්ත ක්‍රීම් වලට මම හොදට ක්‍රීම් කරගත්ත දූරියනුත් එකතුකලා. ඒකට හදුපු පෑන් කේක් ස්ට්‍රෝබෙරි යුෂයෙන් තමයි අනාගත්තෙ. තව ඒ තට්ටු කිහිපයක් අතරටත් ස්ට්‍රෝබෙරි සහ කලු මිදි පෙති කපල අකතුකලා. ඔයාලට කියන්න ඉතින් අපේ මල්ලියා, ඊයෙ අමුතු රහ අදත් දැනෙනවා කිය කිය ඒකත් හොඳට රස කරකර කෑවනෙ. අහිංසක මල්ලි තවදුරටත් රවට්ටල තියන්න හිත දුන්නෙ නැති නිසා මම දූරියන් රහස එයාට කියල දැම්මා. අන්න එයාට දැන් දූරියන් රහ වැටිලා ඉතිරි දූරියන් ගෙඩි දෙකෙන් එක ගෙඩියක් එහෙම්පිටින්ම තනියම කාලා.

It's so amazing how creative you are in preparing foods, it's a gift from God! It's all natural and healthy that almost all ingredients are readily available just around the corner of your land. It's wonderful that you have planted natural foods from fruit bearing trees to healthy vegetables. And the kitchen things are traditionally the healthy way like the clay cooking pots, ceramics, wooden spoons, glass jars. I have not seen you using plasticware, and that's very good. There are no harmful chemicals. It's inspiring to start living the traditional way!

You and Liziqi are my favorite cultural-cooking channels. I live in coast Alaska, but this past year we actually have gotten fresh and frozen Durians, but I didn't know how to prepare. Thank you for these beautiful - and I am sure very tasty - recipes. Yearn for an outdoor kitchen like yours - even here in Alaska it is nicer to cook outdoors both summer and winter. Also, beautiful cinematography, music and editing! With much appreciation to all involved in creating your channel.
