I don't know if I'd leave it on all the time ... Turning it on and off over and over again will adversely impact the seals/gaskets so if you're going to be using it all the time no matter the hour of the day, leaving it on is preferable to heating it up / cooling it down over and over again, etc. However, if you're calling it a night and it's going to hang out for 8 hours with no attention? I'd shut it down. - Kat
You really need to do a complete overhaul of the GS/3 review. They have upgraded the valve (now conical) and have a group manometer, allowing you to do genuine PI even if you're running it tanked.
Why such a huge price difference???? Can you use the rocket r58 to preinfuse at 3bars for 2-3seconds first then raise it to 6-7bars for the remaining 22-23 seconds of pulling the shot? Or is the profitec 700 a better choice? Thanks Gail

Hi Ryan Madrid, Gail turned the lever which activates the pump and water starts flowing for pre-infusion (which is about 3 BAR of pressure), hence the pressure gauge being activated. :-) Coffee does not need to be in the portafilter for that to happen, you just need to turn the lever. - Sarah
With La Marzocco you pay the brand. It's funny the most espresso place (aka Bar) in Italy do not use la marzocco but Faema. Seems like the brand is known more here in the US than back home.
+Pietro Giglio jr With LM you pay the best espresso. Faema or other brand more popular in Italy because cheaper. If you compare espresso from one beans be sure you feel difference. I have both of this coffeemachines - R58 very good, but GS3 really incredible.
+Nickolay Rudoy I m sorry to tell you the truth, but I pulled shots with same coffee on R58 and GS3 and they merely the same. Let's say that in Italy nobody use LA Marzocco. They sell more in us because they know you guys would pay any price for something fancy, Italian and expensive. Maybe it's me, but I spending 7k on a coffe machine is really dumb. At the end here in the US you guys don't drink coffe as it should be (1 shot), but double and triple....;)
Currently, the Rocket is about $2700...the GS/3 really was designed for roasters to test their coffee with a commercial machine that wasn't a multiple group job that required special power / water supply. That said, it is commercial grade while the Rocket incorporates a lot of the same tech theory, but at a smaller scale. I'd say the Rocket's at about a 7 / 8 on the scale you suggest (but that's my personal opinion). - Kat

For the Newbies!! it's all about the consistency and control!! GS3 100 shots 99 the same and R58 100 shots 60 to 70 right shots. it's up to you what you choice because not many people would able to, tells the different shots. and please don't use GS3 vs R58 again, it's like hulk vs rocky!!
GS3 is $7k. How much is Rocket? Is GS3 really worth the difference? I know it probably is better, with bigger tanks, incredible steam and all, but for home use and on a scale of 1-10 where would you place the Rocket if GS3 is 10? ;)
IMO, these aren't even remotely in the same ballpark. Sure, dual boiler, but the LM is a semi-commercial machine built by long-standing, reputable company in Italy. Don't get me wrong, the Rocket is a good machine, but I suspect the LM will last many years beyond the Rocket. Worth investing in something better if you can afford it.
hard to believe that we're looking at two high quality prosumer machines, being used by someone who can not make proper micro foam. all 101 mistakes, too much milk in pitcher, no stretching, pitcher too high during pour..

Preinfusion isn't supported on the GS/3 when using the water tank, only when hooked to permanent water.

At the middle of the lever, pressure decrease for the pre-infusion and re-climb for the extraction when the lever is at full position.

No; you can take it between the 3 bars to full pump, but you can mess with the range like you can on the Slayer (theoretically) - Kat

Kat, you are finally busted in a new GS3. Does the GS3 have pressure profiling like the Slayer?
