Dude you are so entertaining, I’m glad you’re starting on demon’s souls unlike most other fromsoft newbies that started with elden ring and went backwards, looking forward to your journey!
Just so you know the miners are really easy to backstab or to parry, try to practice how to do it a little bit, and it will become second nature to you.
Some pointers from a guy who has hundreds of hours in the PS3 game: Armour Spider is pretty simple: When the fight starts, he can either throw a single fireball, a 3 x 3 short range set, or his webs. Run aside of the big balls, bait then run out of range of the smaller ones (or you can risk running between them) and if you're hit with the web, just raise your shield and tank the fireball after. When in close range, he can do an X-cut or slam. The X-cut can be blocked with the shield every time (you get past the stagger and get some stamina by the time he winds up again), then when he spasms, that's the slam animation, face him straight on and back up a little to avoid his face; that's the cue to lay into him. Finally, when you're in close long enough, he'll create an oil slick that covers 90% of the arena. *Run* . Get back to the entrance to the arena else the oil will obliterate you. When it's done, rinse and repeat until victory.
I know it’s super late, but that spot with the diggers with the flame pokers and the rock throwers, there’s a path behind them to the left of the door behind the stack of barrels. I cheesed the spider boss with arrows, lol! Theres a small bit of invisible wall on the left side of the tunnel that blocks the fire. I was amazed to see they kept it in from the PS3. I actually have no idea how to fight that boss legitimately. XD
Ahhhh darn, missing things like that is so disappointing, and nice I wish I learned to change strategies more I think it would have saved me some stress lol
I don’t know if you got it yet cause you never got the cling ring but the purple flame shield will help against all of those fire enemy’s it’s in the same area as the cling ring with the two dragons

No I haven’t! I actually never came across that in 1-1, any tips for dealing with the dragons?
