Hi Kim , have a question. If we are making kimchi using nappa cabbage, do wd still need sugar? I want to avoid sugar. Any replacement for that ? Or will fermentation not happen without sugar ? I liked your recipe very much. This is authentic Korean veg indian style kimchi. Will try.
🙏Thanks for the love and appreciation and sorry for the late reply as we are busy in shifting home these days. I added sugar to remove bitterness from the radish. You don't need to add sugar if you are making kimchi with napa cabbage.

It's just cooked rice. You need to put in the kimchi and it work as bacteria's food. Kimchi will ferment by itself👍

You should soak the veggies in water with white vinegar (1/4th cup) and salt to get rid of all the pesticides etc (soak for about 20 minutes) rinse and use!
