Honestly, I don't like to comment on bikes I haven't tried. My advice is always to look for a relevant facebook group. Then ask the question there. Usually people give pretty spot on feedback

Based on the video, your saddle is too high and I suggest your replace the TT saddle for any decent short nose saddle like Selle Italia SLR Boost. Cyclocross bikes have high(er) bottom bracket (to the ground) so you shouldn't feel "tipsy". If you do, that means your saddle is too high. I always enjoyed your content. Keep up the good work.

Thanks! I've changed the pedals to MTB ones and height seems better. As for the TT saddle, I don't know. I'm on the fence bec honestly it feels pretty good. I will be trying it on a long ride this Sunday. Then I will decide whether to change it or not.
