Skip your flour,egg wash,and lightly coat with mayo,and go straight to your mixed coating. Less cleanup ,and works great. Keep it up!

I taught my two oldest grandsons how to fish and clean fish. Paxton is the one I want to set up with you. Hopefully I'll get the money soon to book a trip ❤ . If nobody has said it yet, a great fry that I love is using a couple table spoons of cornstarch in your flour and put some salt n pepper in that mix, get your egg dip ready like you like it but are you ready, use crushed up cap'n crunch cereal same way in the bag you can use like a rolling pin get it crushed up almost like powder. Bro it's amazing and try it with chicken breast too. Anyway I like it so I thought I'd share it with ya.
Great Video. Soak the fish nuggets in franks redhot for 20 min prior to dreading it. Skip the egg wash and go directly to a dredge of 1 part corn meal 2 parts flour (add some salt and pepper). It gives is a slight vinegar hot-wing taste. I then use Sriracha ;) Simple and solid way to go. Happy Fishing!
Budweiser, yellow mustard, and eggs whisked intensely then straight into sifted all purpose flour, fry for like 2 min each side then put back in sauce then flour then fry to dark golden crispy and served with frys
I like to bake them. I found a recipe online for parmesan crusted baked halibut and followed that to make the flathead. I did tweak the recipe a bit by adding red pepper flakes to the breading to give it a little kick.
If i remember correctly last time i did flathead i used my gas grill. I soaked the fillets in milk for couple hours, dried em off and used a brown sugar rub with some spices for a little heat, sprayed with olive oil spray to keep the seasoning on and makes it stick less on the grill. Ive done chicken in the past and had good results, and doing the same to flathead left me remembering happy thoughts as i had purchased the fish at a fish market after a day of fishing cuz i suuuck at catching flatheads :-(

Peanut Oil. Long time ago my GrandDad told me peanut oil has a higher burn point temperature - once you burn the oil it's game over, as you found out. My favorite is half Andy's Red/Cajun with a little flour to help coat (add crushed Cayenne to taste). The flour THEN dredge was interesting. Not hating, just that Mom and Grandmaw always dredged then coated, so of course, that's how I do it as well. Maybe it's a geographical thing? Enjoyed the vid👍

Definitely like the cooking segments. cast iron skillet, butter instead of oil, no breading just salt to taste and a good sprinkle of pepper. squeeze lemon on top when it is done. you'd be surprised how good flathead can be if you cook it like you would salmon.
Another good way to do that is using Rits crackers. Put them in a large zip loc. remove all the air and lay flat on a counter. Use a round glass and roll it across a few times. It will break them up into a fine dust. Similar to cornmeal. Then just fry and eat !! Taste amazing on chicken tenders as well.

If you want to try another good batter recipe, crush up corn flakes and put some cayenne in with it. Same crunch, no burning. Awesome video as usual man!
you should season your flour with salt and pepper. your oil was to hot, that's why they turned black..350-375 for the oil. the baggie for crushing up the cheetos will work better if you use a rolling pin or meat tenderizing hammer or a food processor. btw , cheese and fish is a no no....

My personal catfish recipe: Start a fire to get good coals burning. Items needed - Aluminum foil, cooking twine and long tongs for turning the fish. Ingredients- Seasoning, butter, 2 pounds of bacon, 1-2 large potatoes (cut into small chunks) and an optional bass or panfish, also cut into small chunks. Prepare the fish by removing the head, guts, fins and skin. Leave the rest intact. (Fillet, skin and chunk bass or panfish if using.) Cut desired amount of bacon into small chunks. Save the rest as strips. Stuff catfish with bacon, potatoes, and optional bass or panfish. Top with chunks of butter, seasoning and wrap tight with twine. Then wrap the catfish with remaining strips of bacon , then wrap again with twine. Season again, then wrap in foil with several cubes of butter to keep from sticking. Use at least two layers of foil. Place in prepared coals, turning 1/4 turn every 15 minutes. Cook for 1 hour and 15 minutes for 5 pounds of fish. Add 30 minutes for every 5 pounds. When done, slice the TOP of the fish open, remove all bones and ribs with a fork.
Carry small bottle of dawn for that ivy. If u was down good the same day you'll be fine. The ivy oil will stay on everything(tents,clothes,fishing rods) for a long time. Its literally like engine oil,very hard to get completely off
next time try the belly meat like this : cut it up just like you did after its cut up get McCormick meat tenderizer and lightly coat all the meat get Louisiana fish fry in the blue bag or box no milk egg necessary and coat the fish liberally make sure you push the fish in it good so the fish fry sticks good. deep fry until its done. very delicious and your right the belly meat is the best. thanks for the good videos if you get the chance try the gamakatsu 10 aut octopus hooks not the circle hooks just the octopus hooks I've been catching them like crazy on them great hooks. again thanks

Grind the cheetos in food processor or in plastic with a rolling pin. Try butter milk instead of milk egg mixture. Always fry on med to med high never high. Good luck next time.
I keep thinking about it, but don't want to get demonetized. The simplest way is to use some pliars and pull all the skin off. Then fillet the sides and cut the belly meat from the ribs. Hope that helps. Thanks for watching Erich!

Back when I weigh 340 lb all I ate was carbohydrates and fats. After I quit eating them I lost over 140 lb in 8 months. And I am no longer dying from diabetes

I don't eat fish, I just catch and release, but I'd say when cooking breaded this way to deep fry them. You would have better control of the heat distribution on all sides and less risk of burning.
@@RiverCertified you can use a medium to large saucepan. When the fish floats, it’s done. Put the cooked fish in a brown paper sack and gently turn it so the bag soaks up oil. Keep the top somewhat closed while you’re cooking more fish and it’ll stay warm. We cooked a big batch everyday. I learned that on our fishing trips to Mexico..just used salt and corn meal.

Man I do all my flathead belly strips the same way I do my my turkey breasts. Soak em in Frank's red hot overnight and roll in Louisiana brand cajun breading from Walmart right before I drop in the oil. One of my favorite things out there.
This was really great! Now you make me wonder, how would Cool Ranch or Nacho Cheese Doritos taste? Looks like it would actually be really great. Never had Flats but I know I love to Smoke Channel and Blues. Next to Swordfish it's just the best. Still nothing beats Buttermilk and Cornbread Meal deep fried. I'm pretty sure my arteries were already shot because we had a constant diet of Cats from my Dad and I being out every time he got home from work. Good times. my Son just never developed my love for fishing, think it drove him crazy that Dad could sit for hours and just enjoy catching fish and not moving. Great Video. Try using the purple bag doritos I think it's the sweet chili flavor. I used them as breading on some channels and it was crazy good. Just have to crush them up real good. It's a process but definitely worth it. If you're patient enough for it double bread them an it's even better. Watching your videos finally gave me the nerve to try a catch an cook for myself and I've been doin it ever since 😎😎

Try seasoning salt on the fish (small pieces) coat with Tempura batter and roll in Panco bread crumbs.

I use instant mashed potatoe mix ( dry with no water in mix) for my breading. Pick a flavor, dip filets in egg then in the instant mix them fry.

Take the belly meat or the section around the rib cage and boil it in water. When done dip it in butter, taste just like lobster

Grind the cheetos in food processor or in plastic with a rolling pin. Try butter milk instead of milk egg mixture. Always fry on med to med high never high. Good luck next time.

Like always great video, would love to have seen you fillet that flatty. I have been wanting to try flathead but never knew how to fillet them.
I keep thinking about it, but don't want to get demonetized. The simplest way is to use some pliars and pull all the skin off. Then fillet the sides and cut the belly meat from the ribs. Hope that helps. Thanks for watching Erich!
Oh for sure, I can imagine people being like that. Yes, that does help because I wasn't sure if it was similar to how you fillet a channel or not. That sounds easier to fillet after the skinning it because you have a better visual of where to cut. Thank you Spencer, for you videos and your time.

Marinate in your favorite sauce (Franks), Wash in eggs and milk, if you wanna go even further add some melted butter, roll in all purpose flour, then roll in Italian seasoned bread crumbs and blackening powder. Then throw them in the grease and hear that sizzle 🤤

@@RiverCertified I've been eating golden flaxseed and coconut flour and almond flour I actually make it myself, it sucks when your body no longer can properly utilize the basics. Back when I weigh 340 lb all I ate was carbohydrates and fats. After I quit eating them I lost over 140 lb in 8 months. And I am no longer dying from diabetes

I don't eat fish, I just catch and release, but I'd say when cooking breaded this way to deep fry them. You would have better control of the heat distribution on all sides and less risk of burning.

@@RiverCertified you can use a medium to large saucepan. When the fish floats, it’s done. Put the cooked fish in a brown paper sack and gently turn it so the bag soaks up oil. Keep the top somewhat closed while you’re cooking more fish and it’ll stay warm. We cooked a big batch everyday.
I learned that on our fishing trips to Mexico..just used salt and corn meal.

Man I do all my flathead belly strips the same way I do my my turkey breasts. Soak em in Frank's red hot overnight and roll in Louisiana brand cajun breading from Walmart right before I drop in the oil. One of my favorite things out there.

This was really great! Now you make me wonder, how would Cool Ranch or Nacho Cheese Doritos taste? Looks like it would actually be really great. Never had Flats but I know I love to Smoke Channel and Blues. Next to Swordfish it's just the best. Still nothing beats Buttermilk and Cornbread Meal deep fried. I'm pretty sure my arteries were already shot because we had a constant diet of Cats from my Dad and I being out every time he got home from work. Good times. my Son just never developed my love for fishing, think it drove him crazy that Dad could sit for hours and just enjoy catching fish and not moving. Great Video. This Flatheads sacrifice was duly noted by his elders of the muddy deep and deemed good......

Try using the purple bag doritos I think it's the sweet chili flavor. I used them as breading on some channels and it was crazy good. Just have to crush them up real good. It's a process but definitely worth it. If you're patient enough for it double bread them an it's even better. Watching your videos finally gave me the nerve to try a catch an cook for myself and I've been doin it ever since 😎😎
