Three of my grandparents were Polish Americans so I grew up eating Polish foods. Since I have been watching your videos I will be making more Polish meals. I live in Myrtle Beach, South Carolina and we have a Polish deli here (Pulaski Deli). I get my sausage, kiska, farmers cheese, cucumbers in brine, and other items.
Have you ever tried to make bigos (Polish hunter's stew)? This is the most Polish and the best dish in Polish cuisine (in my opinion). Cooking this is very satisfying - you can try to find the perfect balance between sour, sweet and salty flavor. Don't use tomatoes, but the red wine and plum jam (powidla) instead. You can find many recipes on the Internet. Each begos is unique - this is kind of art ;-)
Super video, thank you. My daughter-in-law is Polish & she has been on several courses re finding mushrooms in the wild & her freezer is full of mushrooms. Probably, like your her soup is delicious, so tasty which we had on Christmas Eve. 😊
Love the soup. I used to pick mushrooms with my uncle or grandfather in the forests around Krynica. Unfortunately, I wasn't as expert as I believed. My auntie in Krynica fried them up in butter for me one morning and my dad took me to the church in Krynica. Half way through mass I suddenly felt very dizzy and sick and just made it to the steps outside the church before being violently sick. Fortunately the bad mushrooms were not as bad as they can get or I wouldn't be here today. Wild mushrooms are still my favourite of all foods.
I recently discovered your channel. I can not tell you how much I appreciate you and your husbands work! I am born and raised outside the Detroit Michigan. All of our Holiday feast that we have were taught to us as having Polish roots. Most of my grandparents and their siblings were born and raise in Hamtramck Michigan if not from the "Old Country." Hamtramck is where we get our paczki for fat Tuesday, I know its not Thursday in the states. They even have a statue of Pope John Paul II, it was up well before his canonization. I digress, my point is I there is so much my family has lost or hasn't experience because no one wants to put in the work. I am hoping to restore that with your help, and maybe a family member or two. Thanks again, and I am definitely buying your book for myself and those family members that will be helping me.
Soaking the mushrooms tonight and will make the soup tomorrow for the first time. No parsley or celery roots available. I am going to use a parsnip and a celery stalk. I plan on eating the soup the day after I make it. I got the dryed mushrooms from Amazon.
Anna you are the best..I love your natural and calm approach to polish cooking..coming from a polish background our dinners were fabulous..my aunt prepared a mushroom soup made with sauerkraut juice and of course dried mushroom broth..it was a very clear broth..I have the recipe and you inspired me to make it for my easter dinner..my best to you and your husband..also enjoy your fridays in your home town..
Ty so much for demonstrating the mushroom soup. My Busha used to make this at xmas so of course the recipe was lost when she passed as always nothing was written down. I will buy your book for sure.
Christmas food traditions are so fascinating. Some families are very focused on their cultural heritage, while others aren't so traditional. Growing up in a predominantly German family here in Minnesota... my mom would always make lasagna on Christmas eve. Not exactly a standard German meal, but that is what my mom used to make since we all loved it. My dad was a little more traditional and made himself a small pot of oyster stew later on in the evening, and he always enjoyed smoked fish and pickled pigs feet! I hope that you are thinking of making bigos sometime in the next few weeks! Happy Thanksgiving!
So far fried fish and red borscht and mushroom soup. I need to find a few more Christmas sides ^_^ so I'm gonna look through the rest of your channel. Thanks so much for your informative videos!

@@donnarichey144 thanks for asking, not sure if you wanted to asked this question under my comment- look @Dennis Dombroski but parsley root is very similar to parsnip in looks but has much less intense flavor similar to parsley. Is great as a base for vegetable broth.
We always made wild mushroom soup for Wigilia and Christmas. A family tradition going to pick mushrooms in the Fall. We would use a mix of borowiki, prawdziwki, kozaki and rydze. What a taste treat, thanks for sharing your recipe, love your videos, best wishes😊.
I love all of your dishes and videos that I've watched. Everything looks fantastically delicious, and what I've made using your recipes reminds me of my mom ❤️. Thank you!
We have used dried snow white mushrooms, you just have to slice and dry them yourself. Just spread them out on a cookie sheet and place them in a cool, dry area. Warning, they get a bit smelly. The dried mushrooms have a intensified flavor. I love this soup more than the American type of mushroom soup.

I cook this soup (my favourite) from 3 ingridients: dried (!) bolete mashrooms/penny buns, onions and cream (NOT sour, 30% of fat) Then I season it with salt and pepper only. The bolete mashrooms/penny buns have enaugh of flavor and color without any vegetables or additional ingridients. You can serve this with noodles, macaroni, bread, whatever. Some people like it with potatoes (I don't). Enjoy!
Just watched your potato dumpling video and unintentionally touched the subscribe button . Happy accident ! I wonder how those dumplings would be in this .
the liquid from the soaked mushrooms really adds a earthy aroma and flavor to the base. Glad to see you add it to the base! Now when you add the cream is the soup hot, cause I always get curdling How can I avoid this? especially in my borscht, an you discuss this on a video?
What about it over some egg noodles? Or even kluski? And what would you think, just noodles with a bit of chive on top? You think that would be decent?
While it is strictly true that the use of animal products is traditionally not used, there are many families that don't follow those restrictions. Many families serve a wonderful poppy seed roll on Christmas Eve and that has eggs in it. I think egg noodles would be wonderful in this soup. Thanks for watching!
