Intermittent coolant leak could be coolant flange when the built in o ring goes hard where it attaches to the block. We had v similar symptoms and was this. Thanks for videos.
I removed my downpipe in 20 mins in my driveway on ramps and did like nothing you did haha the bracket was easy to get to and the downpipe came out fairly easy even with it not even a foot off the ground
The engine and subframe are very ‘wet’ is that the coolant or do you have an oil leak… looks like there fluid around the head gasket area… hopefully it has run ‘down’ from somewhere else?

In hindsight you’d have dropped the engine and gearbox with doing the clutch on the side, turbo down the back and thermostat / water pump under the manifold down the front 🤦♂️. Typical but it happens to us all and could have been done in a day all at once if known about.

Try adding some red food dye to the coolant, that will leave a trace on the area of the leak

That sounds really, really nice both in tick over and when you're tickling the throttle.

Sounds like water pump & thermostat housing. A friend had the exact same issue on his 7R. Changed those & no more loss of coolant.

That’s coolant where I took the rear hose off for the turbo, also a little bit of waxing from the driveshaft which is normal
some uv dye in the coolant...like the ac...can help to spot the leaks...... I think..

Almost certainly the thermostat, common problem on MK7. Change the water pump gasket at the same time
For the coolant leak take a look at the water pump, mk7’s are known for water pump leaks
Thermostat and water pump…. Well known and common VW issue.
I’ve recently had mine replaced at just 42000kms.

Water leak will be thermostat housing it’s a common issue. I have the scorpion turbo back resonated on my Cupra 280 & its too loud, but decat life yo

The rotor blades are also different on the new turbo. Does that help or not.

How did you prime the turbo ?
Just blow the fins and make turbo noises that tends to work
Put some oil in the inlet port
