Steam is steam, you can’t change the temperature, do you mean with the milk temperature? If so a thermometer it the best way to measure your milk temperature

Old style one definitely better build quality, the steel body on the new one is flimsy and cheap. A refurbished classic original is certainly the way to go now.

The original is better, it doesn't have that stupid new anti vacuum valve
