I do the same thing except I don’t change the water cause I think the block of frozen meat keeps it near 40 degrees for a few hours then if it needs longer I just put in the fridge. First time doing a brisket and mine is taking longer going on idk 5-6 hours and still not thawed. Stuck it in a plastic been with ice and water, leaving it over night THEN, putting it in the fridge at 44 degrees, then smoker for christmas. Glad to see someone else does it similar also.
Save yourself a step. Put it in a cooler near your water hose. Fill with water and change water every 30 min. Easy since most coolers have a drain plug

How about just tossing the brisket into a bath tub full of water?
You can, but the key to defrosting it faster is changing out the water every 30 minutes so the water isn't too cold.
