Fan cleaning (put it on the schedule), why not easier to access (unscrewing door vs latch), and fan remove (with hex bolt vs thumb screw) and not just wipe/brush off. Ironic the fan has to be cleaned regularly for smoke/creosote buildup, but not the exhaust?

We use these at my work. Ribs 300 for 90 minutes then wrap and back in for 60 min

Use green wood followed by..... There's no benefit in soaking dry wood.
