  • How to bottle carbonated wine using a counter-pressure bottling tree. The wine in the korneleus keg has been pressurized to 48-50psi at a very cold garage temperature. I like to let it sit plugged in for 5 days (make sure you don't have a leak). This allows the CO2 to dissolve nicely and gives you a finer mouse.

      I didn't make this one but I found a similar one for sale online. Mine is mounted to an adjustable clamp so I use the adjusting part to raise and lower the bottle. You can adjust the length of the fill tube by loosening the nuts on the main spigot and sliding the stopper section up and down. I added the Lexan shield after a beer bottle blew up on me.

      @@urbanevintner105 You mentioned that there were two tubes. One to allow CO2 and the wine into the bottle. the second my come up to the release valve. Do both tubes go through the rubber stopper i'm guessing? What is the diameter of the two tubes? Do they both go through the lower valve or does the inlet for CO2/wine go around behind the overflow valve? Can you send me some close up pics please? baxterwines@gmail.com. Thx ... Gord

    What’s a good base wine to use for a very dry champagne?

      I prefer Chardonnay for a dry champagne and make a batch each year. I also make a Sparkling Pinot Gris every year that is dry and very good. Last year I also made a dry style of Cab Franc Rose that tastes very good but might need some time to settle in (yes I like Champagne!) For an off-dry style try Apple wine with a little apple juice blended back in prior to bottling to add in the apple flavour and some sweetness. It's very cheap to make -Brian
