TAKE THE FLOUR/ATTA IN A BOWL AND ADD SALT, JEERA, OIL AND KNEAD IT BY ADDING WATER ACCORDINGLY. THE DOUGH SHOULD BE HARD AND LET IT REST FOR 10 MINUTES.
PAPDI CHAT:
2 TO 3 BOILED POTATOES/ SWEET POTATOES
GREEN CHUTNEY:
1⁄2 CUP CORIANDER
1⁄4 CUP PUDHINA
SENDHA NAMAK
GINGER 1⁄2 INCH
1⁄2 CHOPPED TOMATOES( OPTIONAL)
1⁄4 TSP AMCHUR
2 GREEN CHILLIES ACC TO TASTE
IMLIE CHUTNEY
DAHI
CHAT MASALA
POMOGRANATE 2 3 TBSP
MAKE THE BIG ROUND OF ROTI WITH DOUGH PREPARED IT RECIPE 6 CUT OUT SMALL ROUNDS WITH THE HELP OF A GLASS AND POKE THE PAPDI WITH FORK AND DEEP FRY THE PAPDI IN THE GROUNDNUT OIL.
NOW, MASH THE POATOES AND ADD ONTO THE PAPDI THEN ADD GREEN CHUTNEY, IMLI CHUTNEY, DAHI AND CHAT MASAL AS PER YOUR REQUIREMENT AND TOP UP WITH POMOGRANATE.
KACHORI
FILLING:
2 TBSP GROUNDNUT OIL
1⁄2 TSP JEERA
1⁄2 CUP GROUNDNUT GRINDED
2. GREEN CHILLIES
1⁄4 CUP GRATED COCONUT
1⁄2 TSP DRY MANGO PWD
TAKE A PAN ADD OIL AND LET IT HEAT FOR FEW SECONDS AND ADD JEERA AND LET IT SPLATTER. THEN, ADD GROUNDNUT AND FRY IT UNTILL IT BECOMES GOLDEN BROWN IN COLOUR. THEN, ADD CHOPPED GREEN CHILLIES AND COCONUT AND TURN OFF THE GAS AND THEN ADD SPOON OF SUGAR AND DRY MANGO PWD AND SALT AND LET IT COOL.
NOW PREPARE THE KACHORI WITH THE DOUGH PREPARED IN RECIPE 6. NOW ROLL OUT THE ROTI AND STUFF WITH THE FILLING WE PREPARED AND CLOSE IT TIGHTLY SO THAT THE FILLING WON’T COME OUT OF THE KACHORI AND DEEP FRY UNTIL IT BECOMES GOLDEN BROWN IN COLOUR.
