As far as I know, risotto should be more like a cream, than like a soup. Basically, when it's completely cooked, you should put a spoon of (vegan) butter in the pan and mix it well. That's called "mantecatura" and gives the risotto its texture. Risotto is typically made in the north of Italy and I'm from the south, so I'm not 100% sure about the soupy/creamy thing. I would love to make that kale salad, but it's not easy to find kale here 😅

Hi beautiful creature! Just a small suggestion (you know how we Italians are made, cooking is a sacred thing). The trick for a perfect risotto is to cook the rice with a vegetable broth, glass by glass like you did. Put an onion, a little bit of celery and a carrot in a little pan and add it slowly to the risotto. Finally, for "al dente" cooking, at the beginning you can literally toast the rice lightly with a little bit oil and onion. Final tip: the best wine to blend risotto with is Barolo so while you cook you can also drink it and the risotto taste better :)
