    My friends all love soft cookies and I'm the only one who loves crispy. Thanks so much for the recipe and explaining why the ingredients and the quantities make it crispy. That's help me a lot because I've tries to make crispy cookies on my own and they never came out the way I wanted now I know what to do. I can't wait to try it. I also have to say it's really helpful for me to know the grams for the eggs because I've noticed when I buy eggs they're not all the same size even when they're in the same carton. Thank you 😊

    Dear Stephanie, I finally made the cookies using white choc chips and adding chopped up honey roasted macadamia. I spooned 35g dough each and made 14. THEY WERE HEAVENLY. Crispy, just the right amount of sweetness and absolutely addictive. And you were right: they took no time at all to make and were fool proof. Thank you thank you thank you!

    Very interesting... I have learned some insights into cookie crispiness baking oatmeal cookies with different additions... the more things you add (nuts, raisins, chips, etc) the less they spread and the more baking soda and less baking powder the more they spread.

    Hi Stephanie, I'm based in Scotland, UK, and recently stumbled across your channel whilst looking for a 'Naniamo Bar' recipe to make for my Canadian friend. I ended up using your recipe and also making your 'Graham Crackers'. Both recipes were excellent and turned out extremely well, so thank you. I have since subscribed to yor channel and earmarked a few more recipes to try. I thoroughly enjoy listening to your articulate, upbeat and enthusiastic tone. One of the main reasons for following you apart from your marvellous recipes is that you actually weigh out your ingredients using grams etc., (not only in cups.) However, can you please clarify if you are using a conventional oven or fan oven as temperatures differ. Can you also clarify whether it's baking powder or bicarbonate of soda when using. I appreciate there is a slight language difference. Thank you once again.

    • @joyofbaking
      @joyofbaking 2 ปีที่แล้ว

      The oven temperatures are for a regular oven. If using a fan (convection) oven you may need to reduce the oven temperature by 25F (15C). But it depends on your oven as some (like mine) you don’t need to adjust the temperature. I would check your oven’s manual. Baking soda also is called bicarbonate of soda which is different than baking powder. I do say which type I’m using.

      Shortening produces a different crust than butter. While shortening makes a more light and flakey crust, butter gives the crust a texture that is more crisp. Baking time shouldn’t be much different no matter which type of fat you use.
