Mabye the ender pearl pearl the speedrunner thre landed in the nether portal you saw, and that could be how they got in the nether.
The fully lit end portal is possible but very, very very very very rare like 0.00000984375% chance of happening
It can be fully lit it is just very very rare it is common in faked Speedruns

A 12 vein of diamonds is not impossible, but it is rare, I have found one before, since 8 diamonds is the max per chunk, if they spawn perfectly on the chunk border it can be up to 32 diamonds! So 12 is possible
