Mandolin Pick Technique- Crosspicking & Syncopation

Been hammerin' away on a six string for just over four decades. I've never come close to a fraction of your talent but it makes me happy.
Anyway...
Your instructional videos are inspiring. After a hard days work holding a trowel I need that. Fingers hurt and I just wanna pour a tall one, grab a shower, tell my old Fender "I'll see you tomorrow" and go to bed. You help me and the old girl get motivated.

I play only from sheet music. Would you say that it is wrong to let the music dictate picking? I know different stroke techniques, but in classical I've almost always used down stokes on the beat and upstrokes on the off UNLESS it makes it impossible to do so. Some of Bach's music requires different picking styles. Thanks.
