    Chirote is Maharashtrian special teaditional delicacy. It is popular in Karnataka too. It is a dessert that is made on the festival like Diwali or Gauri Ganapati. It turns out nice, flaky, crispy and light. If you follow this recipe then you will get perfectly Halwai style chirote. It is also known as khaja.     Ingredients:
    • 2 cups Maida
    • 1/4 tsp Salt
    • 4 tbsp melted Ghee
    • Water
    • 1 cup Sugar
    • 1/2 cup Water
    • Orange food color (Optional)
    • Ghee
    • Corn flour
    • Oil for frying
    Method:
    • Take maida, salt, ghee and mix everything well together until the mixture turns crumbly.
    • You can use oil in place of ghee if you want.
    • Add a little water at a time and knead medium consistency dough.
    • Spread a little ghee or oil on the dough, cover it and rest for at least 30 minutes.
    • For making sugar syrup, heat up a pan on medium heat and add sugar, water.
    • Mix well and let the sugar melt completely.
    • Cook the syrup on medium for another 5 minutes.
    • Turn the heat on low and check the consistency of the syrup.
    • Take a small amount of syrup in a dish and let it cool down a little.
    • Check for single thread consistency syrup.
    • Turn off the gas and add orange food color.
    • Adding food color is optional. You can skip it if you don’t want.
    • Mix well and sugar syrup is all ready.
    • Take the dough and knead it once more to make it smooth and even.
    • Divide the dough into equal portions and roll them into smooth balls.
    • Take one dough ball and roll it into chapatti as thin as possible.
    • Keep the chapatti aside and roll chapattis from all the dough balls.
    • Take one chapatti and roll it just once.
    • Spread ghee on it and sprinkle corn flour.
    • You can use oil in place of ghee and rice flour or maida in place of corn flour.
    • Spread corn flour evenly and place another chapatti.
    • Again spread ghee and corn flour on it and repeat the process until all the chapattis are used.
    • Roll all the chapattis together well once and spread ghee.
    • Spread corn flour and roll the chapattis together into a tight roll.
    • Roll it again to stretch.
    • Cut the roll into small pieces with the help of knife.
    • Take one piece and place it facing layered side sideways.
    • Press it a little from above and roll it a little horizontally.
    • Heat up oil on low to medium heat in a pan and drop chirote in hot oil.
    • Fry chirote well on low to medium heat well from both sides.
    • When chirote are fried well from lower side flip over and fry well from other side too.
    • When chirote are fried well from both sides take them out, drain excess oil and transfer into
    hot sugar syrup.
    • Coat them well with syrup from both sides and transfer them into a dish.
    • Chirote are all ready.
    • You can store them in an air tight container for about 1-2 weeks.
