hi was trying to find a simple way of Roasting rabbit and I think I found it making it now as it is New Years day I am a Italian born in Quebec Canada and we usually do Lamb or Veal but this year I am going back to my moms recipe of Rabbit and making Sausages Peperonata with roasted veggies thank you for sharing this recipe and BONNE ANNE!!!!
We prefer not to buy our food from the stores. We hunt, raise and grow all of our own food. Rabbit is a big thing on our menu. We raise them and also hunt them. The rabbits we like whole because we use the hides for articles of clothing, the feet for charms and other things, and we LOVE the taste of rabbit. Thank you for the wonderful video. Your rabbit looks delicious :)
Thanks so much for this recipe. Going to try this tonight, first time cooking Rabbit here in the US since grocery now carries. Enjoyed rabbit in France, not many resturants here in the US serve rabbit I suppose becase so many people have them as pets. It would be like serving hamster I guess.

Rabbit and chicken are really similar in taste and preparation. I guess rabbits are luckier tho, since no one keeps chicken as pets... :P
Niaz Abdul Khalam The alcohol actually gets cooked out of the wine, so mostly it is a flavoring and will not be alcohol anymore. It will not get you drunk, or taste like it did when it went in the pot, but, if you or someone you know has an allergy I would avoid it.

I suppose it doesn't matter much. As with all cooking, you can mostly remove anything you don't like and replace it with something else :)
