Ingredients
Kantola - Kakora (250 gms )
Cumin seeds - 1/2 tsp
Asafoetida - 1 pinch
Turmeric powder - 1/4 tsp
Fennel powder - 1/2 tsp
Coriander powder - 1 tsp
Red chili powder - less than 1/4 tsp
Salt - 3/4 tsp (or to taste)
Ginger - 1 inch piece (grated)
Green chili - 2 (finely chopped)
Green coriander - 1 tbsp (finely chopped )
Mango powder - 1/4 tsp
Oil - for frying

I made it just with jeera onion green chillies and pinch of turmeric and salt. Came out very good. Actually with limited spices you get the real taste of the veggie.

In South Indian style we make it even simpler. We steam the chopped kantola, on the side we make a tadka of moong dal jeera rai kadipatta green chilies and hing. Once the tadka splutters we add 2 tsp of tamarind pulp, salt and just abt half tsp of jaggery. Mix this well and lastly add the steamed kantola. Cover and cook for 5 mins on low flame. Garnish with freshly grated coconut and dhania. Tastes awesome. There is no hard and fast rule to make this vegetable. It can be cooked the same way you cook karela, turai, tindora, Tinda ect.

I tried to make this sabji, but it came out tasting a little bitter. Although this sabji does not taste bitter. Did I miss out something?
