The most interesting honey note I've ever encountered was in Serge Lutens's sadly discontinued Miel de Bois, which I had a sample of back in the day. Didn't go for a bottle because I had trouble coming up with any occasion that I'd actually wear it. But I've been hoping to encounter a similarly animalic honey note in a more wearable (for me) package ever since.
The Amouroud that interests me is still Santal des Indes because it has an absinthe note. One of those note lists that makes me think "I might like that"

Have you tried "Zaharoff, Signature Aurum"?. You can't be a honey lover and not have tried it. Realistic honeycomb fragrance with spices. Any honey lover Needs to test it. ❤❤👏👏
This made Max Forti's #1 spring scent a couple years ago. What a joke, wouldn't be surprised if he gets paid by this brand since they are both out of NYC. I bought a sample back then and wasn't impressed at all.
