Violence Jack and Fist of the North Star are both shonen manga and they are some of the goriest manga out there.
Grave of the Fireflies is known to be one of the most depressing films of all time (and was, in fact, feared as being box office poison due to its bleakness) and is still a shonen anime.
Neon Genesis Evangelion is one of the most disturbing and nightmarish anime out there and it's also shonen.
On the other hand, you have anime like Is This Order a Rabbit? and 5 Centimeters Per Second which are considered seinen despite being very clean G/PG anime.
