This is not Bengali Jhalmuri......You are seriously getting misguided......Bengali Jhalmuri would essentially have "Aam Tel" as an indispensable ingredient......Please refer to the video uploaded by chef Ranveer Brar.......the jhalmuri that you had was a hybrid form of Bengal and Bihar.....Burrabazar area has a lot of Biharis working as labourers and this Jhalmuri is actually not the authentic Kolkata Jhalmuri as it is very famously known.....this Jhalmuri is made by a Bihari man catering to mostly Bihari customers and therefore has deviated from its original and authentic recipe.
If u dont know then dont misguide plz....Barabazar mostly population is Marwari ...bihari too but not more than Marwaari....kolkata 90% buisness are done by marwari and Biharis are working class

Very nice to watch your food channel Sir Amar, the way of making jhal muri mixing variety of things iis really tasty to eat Sir but but why the shopkeeper is not using big spoon to make jhal muri, he is using hand instead to make jhalmur that seems odd Sir Amar, jai hind 🇮🇳🇮🇳🇮🇳
spoon after first use is technically dirty ... if you sanitize perfectly and prevent all rotting such salad like snack will be tasteless ... part of good savory taste comes from rotten everything that was prepared in morning ... to balance he is adding freshly chopped tomatoes and other freshly chopped stuff ... in summer samosa probably starts rotting fast ... so if you ask to omit samosa or anything you think will be rotten then you will be fine ... this guy is in business for a long time so food poisoning incidence rate must be very low ... but i have heard of horror stories of nasty incidents of poisoning after eating fried stuff but never heard of jhal-muri making sick but to be sure such incidents must be happening ... it is city food inspector's job to make sure good practice are followed ... if preparer was sick with hepatitis he will make all customers sick ... if this guy had a shop things would not be different only more costly ... spoon or no spoon he will pass on hepatitis virus to customers

They are very much hygienic then most of the 🌟 star hotels, atleast they are working out with the food infront of us and secondly,the spoons and the gloves also gathers dust from the roads ,so much that you can see some of the white gloves turns black of the street vendors!!They wash their hands also so that the chilly powder will not effect their eyes if they mistakenly touch them!!
