Idly should be put in sambhar, soaked for few min and then to be taken.Idly absorbs the sambhar and it tastes really well. Idly powder is made of nuts and spices ,adding ghee to the powder and having it with idly makes it much tastier.

You are correct we were told it was invented in Mysore. The red chilli paste inside is the difference. Looking at the sambhar I can tell the owner or cook is from Karnataka state likely from udipi region as the sambhar was slightly sweet by the red color and it’s different than a Chennai chain like sarvana which I know they have in Frankfurt. The sambhar there will not be so red in color or have a slightly sweet taste. However the best dosa is called the davangere benne dosa which means dosa with white butter but it’s hard to get outside south India as the white butter is homemade so only few restaurants make it The best dosa is at MTR in bangalore India. Yes you can buy MTR brand ready to make mixes in the Indian stores in any country

Mysore is the city that was the Capital of Mysore Kingdom (before Independent India) and Mysore state (or Karnataka as it is called now with Capital as Bangalore). Mysore Masala Dosa originated and is a specialty of Mysore and has that chutney smeared while preparing the dosa. The 2 chutneys are Onion chutney and Tomato chutney (since no one seems to have answered your question at 2:50). Idli, dosa, sambar and chutney have the "perfect", timeless blend of different sets of spices (each) which is where all those flavors come from. Indians have perfected this blend by trial and error over 100s of years and this is why you will hardly see "innovations" (or corruption of old recipes) in these foods. Of course, current times means the younger crowd has this habit of murdering classic combinations with abominations like Noodle Dosa, dosa's stuffed with all kinds of weird stuff and so on. No matter what they do, ultimately, when they have the traditional idly, vada and dosa, they always get that smile back on their face (like you did all through the video! :). I live in an area in the US where most Indians are from Kerala. The closest restaurant to my house is actually called Mallu Cafe. Yes many Americans like Indian food here...I saw many when they served an Onam sadya.
@@youttt27 German living in India since 7 years here. I love South Indian food. I think the mistake many Germans are making when first trying stuff like vada, dosa or uttapam is that they don't trust the chutneys for fear they will be too spicy and dip whatever they having too little, then of course it will taste bland. I got most friends and family who have been visiting me in India quite addicted to Dosa and Medu Vada (my favorite) and they miss it a lot in Germany :) Another problem may be that it seems to be a bit difficult to make those things in Germany as you have to ferment the urad dal batter a bit to get the proper consistency. In India that just happens if you leave the container standing at room temperature, in Germany you either need to invest in some device or jugaad a lot to get it to do that and it hardly ever turns out quite as it should. I've visited two places offering South Indian food in Germany so far and both times it was very disappointing (too thick, too rubbery, etc). Weirdly in Paris and London you find amazing places for South Indian food, so really I guess the hotel owners are either facing problems in getting the proper supplies or they don't want to invest in them. It's baffling. Maybe also a critical size of people from one community is needed to get good food in a foreign country. If they are only serving to Germans, cause there is just not enough of their own people coming in to demand proper food, and every other night some German uncle or aunty complains that this or that has too much spice, or too much ginger or too much coriander many places, I feel at some point they just think to themselves 'F it, these guys can't tell good from bad anyway, we'll put less effort and sell them whatever gets least complaints.' and then you get those sanitized versions of Indian food that hardly have anything to do with the real deal anymore. Saw that happen to dozens of places. New place opens and it's actually kind of authentic, visit again half a year or year later and it's the same BS as everywhere.

It's called Idli podi, idly powder. You put oil preferably Sesame oil and mix it and have. Best combo for Idly and dosa and can be out on omlette / half boil egg !

the green chutney is called as pudhina chutney and the red one is "kaara chutney" which is made from tomato. our south indian food is always delicious . idli is so opt for morning breakfast which could easily digestable.

The two chutney paste you tried with Mysore Masala Do-se (referring to the ones in bowl - red is usually made with tomatoes+red chilli+spice, green is made with coriander+green chilli+tamarind)
The powdered version is chutney-pudi (pudi=powder in Kannada/Tamil) it usually has a complex mixture of various spice+tamarind and is usually mixed with a little edible oil before consuming 🙃

You are correct we were told it was invented in Mysore. The red chilli paste inside is the difference.
Looking at the sambhar I can tell the owner or cook is from Karnataka state likely from udipi region as the sambhar was slightly sweet by the red color and it’s different than a Chennai chain like sarvana which I know they have in Frankfurt. The sambhar there will not be so red in color or have a slightly sweet taste.
However the best dosa is called the davangere benne dosa which means dosa with white butter but it’s hard to get outside south India as the white butter is homemade so only few restaurants make it

Mysore is the city that was the Capital of Mysore Kingdom (before Independent India) and Mysore state (or Karnataka as it is called now with Capital as Bangalore). Mysore Masala Dosa originated and is a specialty of Mysore and has that chutney smeared while preparing the dosa. The 2 chutneys are Onion chutney and Tomato chutney (since no one seems to have answered your question at 2:50).
Idli, dosa, sambar and chutney have the "perfect", timeless blend of different sets of spices (each) which is where all those flavors come from. Indians have perfected this blend by trial and error over 100s of years and this is why you will hardly see "innovations" (or corruption of old recipes) in these foods. Of course, current times means the younger crowd has this habit of murdering classic combinations with abominations like Noodle Dosa, dosa's stuffed with all kinds of weird stuff and so on. No matter what they do, ultimately, when they have the traditional idly, vada and dosa, they always get that smile back on their face (like you did all through the video! :).
You may be surprised to know that soft idlis are hard to make because they need the correct blend of ingredients fermented properly and then steamed. Takes a while to get it.

@@youttt27 German living in India since 7 years here. I love South Indian food. I think the mistake many Germans are making when first trying stuff like vada, dosa or uttapam is that they don't trust the chutneys for fear they will be too spicy and dip whatever they having too little, then of course it will taste bland. I got most friends and family who have been visiting me in India quite addicted to Dosa and Medu Vada (my favorite) and they miss it a lot in Germany :)
Another problem may be that it seems to be a bit difficult to make those things in Germany as you have to ferment the urad dal batter a bit to get the proper consistency. In India that just happens if you leave the container standing at room temperature, in Germany you either need to invest in some device or jugaad a lot to get it to do that and it hardly ever turns out quite as it should. I've visited two places offering South Indian food in Germany so far and both times it was very disappointing (too thick, too rubbery, etc). Weirdly in Paris and London you find amazing places for South Indian food, so really I guess the hotel owners are either facing problems in getting the proper supplies or they don't want to invest in them. It's baffling.
Maybe also a critical size of people from one community is needed to get good food in a foreign country. If they are only serving to Germans, cause there is just not enough of their own people coming in to demand proper food, and every other night some German uncle or aunty complains that this or that has too much spice, or too much ginger or too much coriander many places, I feel at some point they just think to themselves 'F it, these guys can't tell good from bad anyway, we'll put less effort and sell them whatever gets least complaints.' and then you get those sanitized versions of Indian food that hardly have anything to do with the real deal anymore. Saw that happen to dozens of places. New place opens and it's actually kind of authentic, visit again half a year or year later and it's the same BS as everywhere.

Sambhar and Coconut chutney is the beauty of south indian food. It goes very well with many food like idli dosa pongal vada rice bajji samosa
It's called Idli podi, idly powder. You put oil preferably Sesame oil and mix it and have. Best combo for Idly and dosa and can be out on omlette / half boil egg !
What the hell???, those idlis are like toughened rubber🤷♂️, those aren't good idlis, idlis should be fluffy and spongy, it should dissolve as soon an it hits ur mouth.

Masala dosa was invented by (mysore based person) in chennai nothing else. Podi means powder(idli podi)
