You will not be able to do it. I was under the impression I mentioned any modifications, but I neglected to do so here. Either way, back then I was messing around with adding all super chain/ability plus skills to characters to see if their meta would change significantly.

this guy is using a maxed out profile. your first playthrough you aren't normally this powerful. you certainly don't understand the mechanics or the properties of specific artes by this point. if you were to try it, it would be more back and forth, this guy obviously knows the game front and back.
Papo Papo lol trust me they fight back. The "Tales of" games can get absurdly difficult at times. Especially Xillia 2 and Graces f...dear lord, even on Easy Mode you can still get one-shot
he's likely abusing skills that you don't get until late game to make the character broken, and he plays pretty expertly here, knowing all the enemy's movements to almost never get hit and interrupt them. a normal playthrough is plently challenging
He makes this look easy here but you definitely won't have an easy time yourself when you play it. It's a lot like a fighting game. Pro players will make it look easy because they know the mechanics well and combo into attacks so well they make beginners look like jokes but the execution for things like that are more difficult than these videos will show.
He has all the artes from his previous playthrough if you really want a challenge play your first playthrough on hard it's a lot of fun if you like a challenge
Sure Vesperia has a bad dodging system compared to Grace but it's unique to itself. It's like saying if we wanted Berseria to have a team unison attack.... The combat system is unique to each tales series.

So at around 30 seconds or so, you combo Laplace immediately into Rudolph. How do you do this? I can't seem to make it work

She's a mage, she's supposed to avoid getting hit as much as possible

It's not a hack. One of Rita's sub-weapons has a skill called "Levitate" that allows her to fly.
