They were sailing the boat down wind but needed to change the sails from one side of the boat to another. This is a particularly difficult manoeuvre and needs great control over the boat direction, the movement of the sails and the weight distribution of the boat (including moving the 'kanting keel' under the boat). When sail boats are 'under load' from strong winds behind them, this manoeuvre can easily get 'out of hand', and cause the boat to broach (or in other words come close to capsize) which is entirely 'undesirable'.
