I made this and it turned out pretty good, but I used vegetable broth to make this vegan. Note that even though it tastes excellent, there is very little fat in the recipe so I would not consider this a "meal in a bowl" recipe, but it does make a great appetizer. It's also pretty easy to make, you could throw this together early in the day and let it sit on low heat until dinner. Also the recipe makes a HUGE pot of soup, if you are only cooking for 1 or 2 people, you might consider halving or even quartering the recipe.

You can drain the mushroom-soaking liquid through a coffee filter, to ensure the final broth is sand-free. It's what I always do, anyway. That mushroom liquid is full of flavour!

you can, but then its a different soup. like the difference between a tortilla and a slice of bread. soy curd skin is delicious, its a slippery firm texture.

nephthys3150, no need, once you put the mushrooms in hot/warm water, any grit will fall to the bottom of the bowl. after the soaking period, you can simply rub the mushroom caps in the bowl before using. happy cooking!

You can definitely eat all the ingredients. Bean Curd sticks are one of my favorite foods and can be cooked in many ways.
