I love the idea of the pris-fixe menu. When I was in Lyon, I had one that was a Lyonnaise salad (mustard dressing, ham, and cheese if I recall), Quinelles made of white fish over red pepper purée, and chocolate mousse with espresso to sip.

That looked so good I wish there was a vegan version of it. Don’t laugh, there is some killer vegan artisan cheeses out there where you can’t even tell The difference. One is Miokis kitchen and chao cheeses. They’re so good!
