- IT'S PARTY TIME!!! Hey everyone! Today we are celebrating our youngest son Kellan's 3rd birthday and my dad's 66th birthday as well! They share the same birthday (April 2nd!) and even though the party is decked out in kids MONSTER JAM decor, we included my dad in all the festivities and continued to party all weekend! We all had so much fun! From food prep to the decorations, shopping and wrapping presents, baseball games and celebrating, this mama is worn out! But with Easter coming, a family vacation the first week of May, and then my 6 year old's birthday the end of May, there's no time for rest! (LOL)

SUMMER PESTO PASTA SALAD
INGREDIENTS:
- 1 pound of pasta
- 1/4 cup diced yellow bell pepper
- 1/4 cup diced red bell pepper
- 1/4 cup diced orange bell pepper
- 1/2 cup diced zucchini
- 1/2 cup green olives
- 1 cup fresh pearl mozzarella
- 1 1/2 cup halved cherry tomatoes
- 2 tbsp diced red onion
- 1/4 cup rice wine vinegar
- 1/3 cup mayo
- 1/3 cup basil pesto
- 2 tbsp extra virgin olive oil (I used avocado oil)
- salt
- pepper
1. Boil pasta, drain and put pasta into an ice bath to stop cooking process.
2. Put pasta in a bowl and combine ingredients (adjust seasoning).
BLT DIP
INGREDIENTS:
- 8 ounces room temp cream cheese
- 1/2 cup sour cream
- 1/2 cup mayo
- 1 tsp seasoned salt
- 1/2 tsp garlic powder
- 8 slices bacon cooked and crumbled
- 2 cups shredded romaine lettuce
- 3 Roma tomatoes seeded and diced
- 3 green onions thinly sliced
1. In a medium sized bowl and with an electric mixer, combine cream cheese, mayo, and sour cream until smooth. Mix in seasoned salt and garlic powder.
2. Spread cream cheese mixture into a small, flat bottomed dish (like an 8 inch pie pan). Chill until ready to serve.
3. Top with lettuce, tomatoes, bacon and green onions.

Very cute, I really do miss all the rushing around when my kiddos were little. I use to go all out for birthdays for them. Now that they are 19,21,24 they dont want all that. They just want family dinners and of course cake (which I still decorate 😂). Wonderful decor it looks like everyone had a great time.
