One of the best comments I saw in a different video was the theory that the old animation both characters weren’t trying in the fight while in this new animation both Chara and Sans were going all out and I actually like that theory.

If u look closely at the part when sans got strike by the knife and Chara's look behind her u can see the creator forgot to put the blood on the knife and the blood appear again when Chara start to go away
