I don't quite understand the point of this, as "How have the cars evolved" doesn't just boil down to their top speed. Balance of performance is entirely different for each car, per circuit, and not comparable - who knows if the newer car just had a smaller restrictor/less boost for that race. The grip level of Paul Ricard is also different if you choose a 2019 season car (see note in the 1.1 patch notes), which can influence your exit speed and acceleration. And so on. The Aston, Bentley and Porsche are also new generation of the cars, not just the McLaren.
