YUP SAME WITH PAD THAI, IT WAS ORIGINALLY CHINESE KUEY TIAW BUT THE THAI MADE IT THAI VERSION AND USED SLIGHTLY SMALLER NOODLES. BUT THE BASIC INGREDIENTS IS THE SAME, THE DIFFERENT IS THAT THAI PUT TAMARIN JUICE IN PAD THAI AND FISH SAUCE, CHINESE DIDN'T DO THAT. WITH MALAY KEY TIAU THE MALAY PUT SAMBAL WITH SOME SHRIMP PASTE IN THE SAMBAL, YEH WE SOUTH EAST ASIAN PUT DIFFERENT FERMENTED SAUCE BASE IN IT. WELL MOST NOODLE DISH ALL OVER ASIA WERE ORIGINALLY CHINESE EXCEPT MAYBE LAKSA. THE NOODLES IS INSPIRED BY CHINESE NOODLES BUT THE KUAH OR SAUCE IS DEFINITELY SOUTH EAST ASIAN.
Sambal is onion, garlic, chilli paste, tamarind juice (optional), seasonings..Now, what differentiates one sambal with another is the seasonings and other ingredients (proteins,seafood, etc..) you can experiment with the seasonings or stick with the basic that is salt, sugar and ajinomoto

Sho, there is a slightly different fried kuey teow that is found during breakfast time in some Malay shops. There is no special name for it, but I call it "kuey teow goreng lambak"... lambak means "in a pile"... so this dish is cooked a lot at a time instead of individual order... this is why it is called "lambak"..
Anyway, I like to eat this kuey teow with a fried egg with runny yolk and a lot of thick sambal tumis... it is crazy delicious! Runny egg yolk with kuey teow lambak and sambal is superb! You have to try it!
Taka.. you have discovered that sambal tumis is easy to cook... and after you try to make it yourself, you will learn that you can spend a lifetime trying to get better at it 😅😅😅 this is one of those type of simple yet very profound dishes... to make it worse, there are many different recipes around...
Taka, notice i keep saying "sambal tumis"? That is the type of sambal eaten with nasi lemak... if you say only "sambal", people might confuse it for "sambal belacan", "sambal kicap", "sambal hitam"... and so many others... yes, Malaysia has many types of sambal, so you need to be sure which one you're referring to... 😅😅😅

Congrats Sho San can make Kuew Teow. This method is suitable for ordinary family and servings, unlike stall which stir fry in one to two persons portion at a time required faster cooking time with pressured stove
