Theory - horseradish was used for "feagueing" horses. Introducing a live eel or horseradish to a horse's fundament made the horse sprightly and energetic, and dishonest merchants would use this to help sell their horses. This may have lead to its name?

Ditto ginger root, as in 'to ginger up'. I only have the word of a retired jockey in a pub, so this might be a whisky-fuelled wind-up.

@@HJJSL-bl8kk If you've got a corked muscle or sore legs, you're said to be 'walking gingerly', 'he's a bit ginger on that leg'. Surely not the same connotation?
