Ingredients:
3 eggs 🥚
100g sugar (fructose-based)
100g rice flour 🍚
5g vanilla
5g baking powder
30g olive oil 🫒
For the biscuit cream:
75g sugar
400g whipping cream

The rice flour-based sponge cake is delicious and low in calories, which is why it's one of our family's favorite cakes. Preparation Method:
Separate the egg whites and yolks. Whisk the egg whites with 100g fructose sugar, 10g vanilla, and 10g baking powder for 3-4 minutes until stiff peaks form. In a separate bowl, whisk the egg yolks for 3-4 minutes. Then, add 30g olive oil and 100g rice flour, and gently mix. Bake in a preheated oven at 160°C for 50 minutes.
For the cream, whisk 300g of 33% fat whipping cream with 3 tablespoons of powdered sugar until combined. Chill the cream in the refrigerator for a while to cool down. Cut the sponge cake into 3 layers, then spread the cream between each layer. You can sprinkle cocoa on top for extra flavor. Let the cake sit in the refrigerator for at least 2 hours before serving.
